Asian Chicken Salad

This recipe I got from Food Network's Paula Dean, but I made some changes of my own so its not exactly like hers.

-Cook 1 lb chicken breast in the oven until cooked fully (I cover with olive oil to prevent burning and sticking)
-Chop chicken into bite sized pieces
-Combine chicken with 1/4 cup chopped green onions & as much as you want snow peas (or any other veggies!)
-toss with Asian Chicken Dressing (recipe below)

Dressing:
1/4 cup olive oil
5 tbl soy sauce
dash each of sugar, salt & pepper
1-2 tsp ground ginger

This recipes keeps well in the fridge and is extra good when its served as a cold leftover. Good for lunch or dinner!

Dessert First!


This is a really quick and yummy dessert recipe! Cut angel food cake into bite sized pieces. Top with slices of your favorite fruit (I like strawberries best!) and wrap with thin slices of fruit roll-up. Sushi dessert!


Note: the fruit makes the fruit roll-up start to dissolve and become sticky so to avoid this I was suggest assembling right before serving or using something else to wrap the "sushi". Any ideas what else to use?
